Want to try something new to pep up your salads at home? This tangy, garlicky oil-free dressing is for you! This recipe was an assignment from my plant-based cooking class. Traditional vinaigrettes use oil and an acid like vinegar or lemon juice. I tend to use olive oil. Just trying something different.

Oil-Free Sweet Balsamic Vinaigrette
1/2 cup balsamic vinegar 3 tablespoons low-sodium tamari sauce 3 tablespoons maple syrup 1/2 onion granules 1 1/2 tablespoons nutritional yeast (optional) fresh herbs of your choice (I used about 1/4 teaspoon of rosemary) freshly ground pepper to taste
Whisk all ingredients in a large bowl. Spoon over your favorite salad or roasted sweet potatoes. Enjoy!
